Ingredients
• Salad:
• 2 cups orzo pasta
• 2 (10 oz.) packages baby spinach
• 3 cups chopped grilled chicken
• 2 roma tomatoes, diced
• 1/2 cup pine nuts
• 1/4 cup chopped sun-dried tomatoes
• 2 tbsps. capers, or to taste (optional)
• Dressing:
• 1 cup balsamic vinegar
• 1/3 cup olive oil
• 1/4 cup white sugar
• 2 tbsps. dried parsley
• 2 tsps. dried basil
• 2 cloves garlic, pressed
• 1 tsp. dried oregano
• 1 tsp. salt
• freshly ground black pepper to taste
• 1/4 cup freshly grated Parmesan cheese, or to taste

Direction
• Boil a big pot of lightly salted water; add orzo. Cook for 10-11mins while mixing from time to time, until the orzo is completely cooked yet still firm to chew; drain. Rinse the orzo in cold water.
• In a big bowl, combine the capers, sun-dried tomatoes, pine nuts, tomatoes, chicken, spinach and orzo.

• In a bowl, whisk together the pepper, salt, oregano, garlic, basil, parsley, sugar, olive oil and balsamic vinegar; drizzle on top of the salad, then toss to coat. Sprinkle Parmesan cheese on top.
